1 cake yeast
2 cups water , lukewarm
1 cup milk
2 tablespoons butter , softened
1 teaspoon salt
2 tablespoons sugar
1 1/2 cups flour
5 cups rye flour

Instructions

1.Dissolve the cake yeast in lukewarm water and add in warm milk, sugar, salt and 1.5 cups of flour in a bowl. Combine well.
2.Incorporate the softened butter into this mixture and gradually add the rye flour, until well combined. Knead the dough for about 10 minutes.
3.Form a ball and cover it with a damp cloth. Place in a warm place to proof for about 2-3 hours until it has doubled in size.
4.Preheat the oven to 240°C (465°F).
5.Punch the air out of the proofed dough and shape it into a ball. Place it on a baking sheet lined with parchment paper and let it rest for 30 minutes.
6.Bake the bread for 50 to 60 minutes until it has a nice crust and sounds hollow when tapped on the bottom.
