Ingredients

1 1/4 lbs mixed soft fruit ( red-currants , raspberries , blackberries , cherries )
2 1/2 cups water
8 ounces sugar ( caster or superfine )
vanilla essence , to taste
2 ounces potato flour
4 tablespoons sweet white wine
whipped cream
slivered almonds , to serve
Rodgrod Med Flod, or Red Berry Pudding with Cream, is a traditional Danish dessert that has its roots in the Middle Ages. It is a light and fruity dessert made with mixed soft fruit such as red-currants, raspberries, blackberries, and cherries, thickened with potato flour and sweetened with sugar, and served with whipped cream and slivered almonds on top. Instructions

1.In a large pot, bring the mixed soft fruit and water to a boil.
2.Reduce heat to medium-low and simmer for around 15 minutes or until the fruit is soft and tender.
3.Strain the fruit and reserve the liquid. Add enough water to the liquid to make 3 cups of liquid and add sugar and vanilla essence.
4.In a separate bowl, mix potato flour with 4 tablespoons of the sweet white wine.
5.Add the potato flour mixture to the liquid and heat over medium heat until the mixture thickens and comes to a boil, stirring continuously for about 5-7 minutes.
6.Remove from heat and let cool.
7.Once cooled, pour the mixture into bowls and let it set in the fridge for at least 2 hours or until firm.
8.Serve with whipped cream and slivered almonds on top.
