Ingredients

1/2 cup white vinegar
1/2 cup water
1/2 cup sugar ( I use 1/4 cup Splenda and 1/4 cup sugar to light it up a bit )
1 teaspoon salt
1 pinch pepper
2 cups beets , cooked , peeled and sliced into rounds ( The beets can be diced , julienned or cut into wedges to vary their presentation . )

Instructions

1.Combine vinegar, water, sugar (or Splenda and sugar), salt, and pepper in a saucepan.
2.Bring the mixture to a boil and then reduce heat to a simmer.
3.Simmer for a few minutes to dissolve the sugar and salt.
4.Add sliced beets to the mixture and cook for 5 minutes.
5.Remove from heat and allow the beets to cool in the liquid.
6.Once cooled, transfer beets and liquid to a jar with a lid.
7.Refrigerate for at least 24 hours before serving.
