Ingredients

4 cups rotini pasta or 4 cups penne
1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
4 cups 2 % low-fat milk
1/4 - 1/2 teaspoon hot chili pepper flakes ( optional )
2 cloves garlic , minced
2 cups shredded medium cheddar
2 cups shredded mozzarella cheese
1 tablespoon Dijon mustard
1/2 cup diced red pepper
1/2 cup sliced green onion
2 cups fresh breadcrumbs
1 tablespoon melted butter or 1 tablespoon margarine
3 tablespoons grated parmesan cheese
3/4 cup shredded medium cheddar

Instructions

1.Preheat oven to 350°F.
2.Boil the pasta until it is cooked. Drain and set aside.

4.Gradually whisk in the milk, chili pepper flakes (optional) and garlic. Bring to a boil; cook and stir for 2 minutes or until thickened.
5.Stir in 2 cups of cheddar cheese, mozzarella cheese and mustard until cheese is melted.
6.Add cooked pasta, red pepper and green onion into cheese sauce. Stir until the pasta is well coated with cheese mixture.
7.Transfer the mixture to a greased 13x9 inch baking dish.
8.Sprinkle breadcrumbs on top and drizzle melted butter over crumbs.
9.Top the dish with grated parmesan cheese and remaining 3/4 cup of cheddar cheese.
10.Bake for 30-35 minutes or until bubbly and top is golden brown.
