Ingredients

4 large potatoes
1 cup rocket or 1 cup baby spinach leaves , roughly chopped
1 cup frozen broad bean , defrosted
1/2 cup reduced-fat blue cheese or 1/2 cup reduced-fat cream cheese
4 garlic cloves , minced ( vary to suit your love , or otherwise , of garlic ! )
3 -4 leaves fresh basil
2 -3 slices bacon , middle rashers , all fat removed , chopped ( optional )

Instructions

1.Preheat the oven to 200°C (180°C fan-forced).
2.Peel and slice the potatoes into thin even sizes.
3.Wash and pat dry the potatoes.
4.Toss the potatoes in a large bowl with garlic and basil.
5.Add the rocket or baby spinach leaves and broad beans to the bowl and toss through.
6.Place potatoes in a single layer onto a non-stick baking tray.
7.Sprinkle bacon pieces over the top of the potatoes if using.
8.Bake in oven for 30 to 35 minutes or until golden.
