Ingredients

150 g butter , room temp
3/4 cup sugar
2 tablespoons golden syrup or 2 tablespoons maple syrup
1 teaspoon vanilla
2 eggs
2 cups self raising flour
1 cup sultanas , raisins or 1 cup mixed dried fruit
1/2 cup dried desiccated coconut
2 tablespoons milk
vanilla icing
2 1/2 cups icing sugar
2 tablespoons butter ( softened )
1 teaspoon vanilla extract
1 -2 tablespoon hot water
This Rock Cake Slice is a twist on the classic British treat, the rock cake. The cake itself is moist and flavorful with the addition of dried fruit and coconut. Instructions

1.Preheat the oven to 180°C and line a 20cm square cake tin with baking paper.
2.In a large mixing bowl, cream the butter, sugar, golden syrup and vanilla on high speed until smooth.
3.Beat in the eggs one at a time, mixing well after each addition.
4.Sift the flour into the bowl and fold it in.
5.Stir in the sultanas or dried fruit, coconut and milk until just combined.
6.Pour the batter into the prepared tin and bake for 25-30 minutes or until the cake is firm and golden brown.
7.Remove from the oven and allow to cool in the tin for 5 minutes before transfering to a wire rack to cool completely.
8.To make the vanilla icing, sift the icing sugar into a bowl, then beat in the butter and vanilla extract.
9.Add enough hot water to the bowl to form a smooth, thick icing that is easy to spread.
10.Once the cake is cool, spread the icing over the top and leave to set before slicing and serving.
