Ingredients

Filling :
3 tablespoons olive oil
3 cloves garlic
1 slice fresh ginger root , coarsely chopped
1 tablespoon red curry paste
1/2 cup fresh cilantro leaves
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
3 red onions , chopped
1 eggplant , chopped
3/4 cup chopped celery
1 large red bell pepper , chopped
3 cups diced leftover roast lamb
Sauce :
1 1/2 cups milk
3 tablespoons butter
1/2 cup sweet white wine
3 tablespoons all-purpose flour
salt to taste
Crust :
1 cup all-purpose flour
1/2 teaspoon salt
1 tablespoon curry powder
6 tablespoons shortening
3 tablespoons cold water , or as needed

Instructions

1.Heat olive oil in a large skillet over medium heat.
2.Add garlic, ginger, and red curry paste. Cook for 1 minute.
3.Stir into the skillet the cilantro, cumin, turmeric, cayenne pepper, and cinnamon.
4.Add red onions, eggplant, and celery. Cover the skillet and cook for 5 minutes.
5.Add diced roasted lamb and red bell pepper. Cook for another 5 minutes.
6.Preheat the oven to 400 degrees F.
7.To make the sauce, melt butter in a saucepan. Add all-purpose flour and salt. Stir and cook for 1 to 2 minutes.
8.Pour in sweet white wine, milk and whisk constantly until thickened.
9.Remove from heat. Adjust seasoning with salt.
10.To make the crust, mix flour, salt and curry powder in a bowl. Cut the shortening until it resembles coarse sand.
11.Add cold water gradually and mix to form a ball of dough.
12.Roll the dough on a floured surface to form a thin sheet. Put it into a pie pan or dish.
13.Pour the lamb filling and sauce into the pie shell.
14.Use the remaining dough to cover the filling. Press the edges. Cut some slits to allow the steam to escape.
15.Bake for 20 to 25 minutes until the crust is golden brown.
