Ingredients

2 Cornish hens
1/2 cup treacle or 1/2 cup molasses
1/4 cup red onion , minced
5 fresh sage leaves , finely chopped
4 fluid ounces olive oil
1 teaspoon fresh ground black pepper
1 tablespoon salt , to taste ( optional )
1/2 cup yellow onions or 1/2 cup shallot , diced
2 bay leaves
1 tablespoon all-purpose flour
1 teaspoon fresh garlic , minced
2 tablespoons unsalted butter
1 tablespoon white wine vinegar
4 fluid ounces Chardonnay wine
6 fluid ounces low sodium chicken broth
1 pinch ground cloves
salt , to taste
fresh ground black pepper , to taste
Roastit Wee Chookie Burdies wae Onion Soss is a Scottish delicacy typically made during the festive period. The dish involves roasting Cornish hens until they are crispy on the outside and tender on the inside. The onion soss is a rich sauce made from red onions, Chardonnay wine, chicken broth, and a blend of aromatic spices. The goats cheese dressed with sage adds a touch of creaminess to the dish and balances out the rich flavors of the hens and onion soss.

Instructions

1.Preheat oven to 400°F
2.In a small saucepan on medium heat, combine treacle/molasses, red onion, sage, 2 fluid ounces olive oil, fresh ground black pepper, salt (optional), bay leaves, all-purpose flour, fresh garlic, unsalted butter, white wine vinegar, Chardonnay wine, low sodium chicken broth, ground cloves, salt & fresh ground black pepper.
3.Bring to the boil on a high heat.
4.Simmer on medium heat for 10-15 minutes until the sauce thickens.
5.Dress the goats cheese with sage and chopped black pepper.
6.Rub the hens all over with the remaining olive oil.
7.Season generously with salt and black pepper.
8.Roast the hens on a roasting tray, breast side down, in the oven for 20 minutes.
9.After 20 minutes, turn the hens over and roast the other side for an additional 20-30 minutes or until the juices run clear.
10.Remove from the oven and rest the hens for 10 minutes.
11.Serve with warm onion soss.
