Ingredients

5 large cherry tomatoes
1 bulb of garlic
1 large shallot , bulb whole
1 -2 small red and green chili
1/4 teaspoon salt
1 pinch sugar
1/2 teaspoon fish sauce
1 scallion , white and green parts , chopped
1 teaspoon cilantro leaf , chopped
1 teaspoon fresh lime juice , to taste - ( or more )
Roasted Tomato Dipping Sauce, popularly known as salsa, is a traditional Mexican sauce typically used as a condiment for chips or vegetables. It can also be used to add flavor to tacos, burritos, and other Mexican cuisines. This easy-to-make recipe adds a twist by roasting the tomatoes, garlic, and shallot in the oven. The blend of roasted vegetables with fish sauce gives it a unique taste that you won't be able to resist. Instructions

1.Preheat the oven at 400F.
2.Cut off the top of the garlic bulb and clean the outer layer of the bulb. Wrap it with foil and bake it in the oven for 40 mins.
3.Take a baking sheet, put the tomatoes and chili in it, and drizzle with olive oil.
4.Roast it in the oven for 15–20 mins or until the edges turn brown
5.Cut shallot in half and add it to the baking sheet, with the tomatoes and chili, and put it back in the oven for 5-10 mins.
6.In a blender, combine the roasted tomatoes, chili, shallot, garlic, salt, sugar, fish sauce, and lime juice and blend until smooth.
7.Pour the mixture into a bowl, then add the chopped scallion and cilantro, and mix.
8.Chill for an hour before serving with chips or vegetables.
