Ingredients

1 butternut squash
2 red onions
2 garlic cloves , sliced
175 g penne or 175 g rigatoni pasta
3 tablespoons creme fraiche , low fat is fine

Instructions

1.Preheat the oven to 200C/fan 180C/gas 6.
2.Peel the butternut squash, discard the seeds and cut it into chunks.
3.Peel the onions and cut them into wedges.
4.Put the butternut squash, onions and garlic in a large roasting tin.
5.Drizzle with olive oil and toss together to coat everything evenly.
6.Put the tin in the oven and roast for 25-30 minutes, stirring once or twice, until everything is golden brown.
7.Cook the pasta in boiling salted water until al dente.
8.Drain the pasta and return it to the pan.
9.Add the roasted veg and creme fraiche.
10.Toss everything together and serve immediately.
