Ingredients

30 ml vegetable oil
1 large butternut squash
1 small onion , chopped
2 granny smith apples , peeled , cored and cut into 2 cm chunks
2 cans chicken broth or 2 cans vegetable broth
5/8 ml dried thyme
120 ml half-and-half
salt
thinly sliced red apple ( to garnish )

Instructions

1.Preheat the oven to 400°F.
2.Cut the squash into 1 inch pieces and place in a bowl. Toss with 2 tablespoons of oil to coat and spread out on a baking sheet. Sprinkle salt and pepper on the squash before roasting for 25-30 minutes.
3.In a large pot, heat the remaining oil over medium heat, then add onion and apples. Cook for 5 minutes or until the onion and apples are soft.
4.Add the chicken broth and dried thyme to the pot and bring to a boil. Reduce heat to low and let simmer for 10 minutes.
5.Transfer the roasted squash to the pot and let everything cook together for another 5 minutes.
6.Use an immersion blender or transfer to a regular blender or food processor to puree the soup until smooth.
7.Return the soup to the pot and stir in the half-and-half. Season with salt and pepper to taste.
8.Serve hot and garnish with thinly sliced red apple for a pop of color and added crunch.
