9 9 ounces provolone cheese or 9 ounces feta cheese , sliced thinly
12 fresh mint leaves
1 lemon , juice and zest of

Instructions

1.Preheat your oven to 200°C/400°F.
2.Cut the peppers in half and remove the seeds and membranes.

4.Roast the peppers for 20 minutes or until the skin starts to blister and brown.
