Ingredients

1 tablespoon extra virgin olive oil
1 onion , diced
3 garlic cloves , minced
1 stalk celery , finely minced
16 ounces fresh mushrooms , sliced
56 ounces crushed tomatoes
14 ounces prepared roasted red peppers , rinsed and pureed
1/4 teaspoon black pepper
1/8 teaspoon crushed red pepper flakes ( optional )
1/2 tablespoon garlic powder
1/4 tablespoon dried oregano
1/4 tablespoon dried parsley
1/4 tablespoon dried marjoram
1/4 tablespoon dried basil
1/4 teaspoon salt
1/2 cup port wine ( optional )
1/4 teaspoon salt
16 ounces dried linguine
1/4 cup grated parmesan cheese , for garnish
2 sprigs fresh parsley , chopped
4 fresh basil leaves , chopped
Linguine is a type of pasta that originated in Italy. It is a long, flat noodle that is similar to spaghetti but slightly wider. Instructions

1.Warm the olive oil in a large skillet over medium heat.
2.Once the oil is hot, add onion, garlic and celery to the pan. Cook them until they are soft.
3.Add sliced mushrooms and cook them for 5 to 7 minutes.
4.Add the crushed tomatoes, red pepper, black pepper, red pepper flakes, garlic powder, oregano, parsley, marjoram, basil and salt. Stir all the ingredients together.
5.Add port wine if you want and cook for 5 minutes.
6.Boil the linguine according to the instructions on the package. Cook the pasta for around 10-12 minutes, then drain it.
7.Serve the roasted red pepper & tomato sauce over linguine and sprinkle with grated parmesan cheese, fresh parsley and basil leaves.
