Ingredients

4 -8 slices swiss cheese ( or your favourite )
2 large roasted red peppers , each cut in half to make 4 large pieces ( I used deli bought )
4 large fat asparagus spears
2 tablespoons olive oil , divided
4 tablespoons butter , divided
1/2 - 3/4 cup dry white wine ( or chicken broth )
6 -8 fresh basil leaves , roughly chopped
salt & freshly ground black pepper
extra asparagus spear , for garnish
roasted red pepper , strips for garnish

Instructions

1.Preheat the oven to 375°F (190°C).
2.Take each chicken breast half and cut it in half horizontally to create a pocket for the stuffing.
3.Season the chicken breasts with salt and freshly ground black pepper.
4.Divide the prosciutto slices, Swiss cheese, roasted red pepper, and asparagus spears among the 8 chicken breast halves.
5.Carefully fold the chicken breasts closed and secure with toothpicks.
6.Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
7.Brown the stuffed chicken breasts on all sides, about 5-6 minutes per side.
8.Transfer the chicken to a baking dish and pour the white wine or chicken broth over the chicken.
9.Sprinkle the chopped basil over the chicken and season with salt and freshly ground black pepper.
10.Bake in the preheated oven for 25-30 minutes, until cooked through.
11.Remove the toothpicks before serving and garnish with extra asparagus spears and roasted red pepper strips.
