Ingredients

3 red bell peppers
3 cups chickpeas , canned , cooked and rinsed
1 tablespoon garlic , fresh minced
1 cup tahini
1/2 cup lemon juice , fresh
1 tablespoon paprika
1 tablespoon chili powder
2 teaspoons cumin , ground
1 teaspoon salt
1/2 teaspoon cayenne pepper
3 tablespoons virgin olive oil
1/4 cup parsley , fresh minced
Roasted Red Bell Pepper Hummus is a delicious and healthy twist on traditional hummus. The roasted red bell peppers and spices add a wonderful flavor and kick to the creamy chickpea-based dip. Instructions

1.Preheat your oven to 450°F (230°C). Slice the red bell peppers into quarters and remove the seeds and stem.
2.Line a baking sheet with parchment paper and place the red bell pepper pieces on it. Drizzle with olive oil and roast in the oven for around 20 minutes, or until the peppers are softened and slightly charred.
3.In a food processor, add the chickpeas, garlic, tahini, lemon juice, paprika, chili powder, cumin, salt, cayenne pepper, and roasted red bell peppers. Blend the mixture until smooth.
4.With the food processor running, pour in the olive oil through the feed tube. Continue to blend the mixture until it reaches the desired consistency.
5.Add fresh minced parsley to the hummus and blend for another few seconds.
6.Transfer the hummus to a bowl and garnish with a drizzle of olive oil and sprinkling of paprika.
