Ingredients

1 rabbit , whole
1 cup sausage meat
1/2 cup breadcrumbs
1 tablespoon rosemary
1 cup white pearl onion
2 -3 large carrots
10 slices streaky bacon
3 cups small potatoes
1 pint stock ( chicken or vegetable is fine or , if you are given the rabbit WHOLE , make up some rabbit stock ! )
100 g lard
1 teaspoon flour
Roasted rabbit is a classic dish that has been enjoyed for centuries. This recipe takes a whole rabbit and stuffs it with a flavorful sausage mixture before roasting it in the oven with onions, carrots, potatoes and bacon. Instructions

1.Preheat the oven to 180C.
2.In a large bowl mix together the sausage meat, breadcrumbs, rosemary and flour.
3.Spoon the stuffing into the cavity of the rabbit and close with skewers or string.
4.Peel the onions and carrots and cut into chunky slices. Add to a roasting tray along with the potatoes and lard.
5.Season the rabbit with salt and pepper and place on top of the vegetables.
6.Drape the bacon slices over the rabbit and pour the stock around it.
7.Roast in the oven for approximately 2 hours and 30 minutes, basting occasionally.
