Ingredients

2 -3 lbs beef tenderloin
2 tablespoons kosher salt
2 tablespoons black peppercorns
4 tablespoons olive oil
1 loaf fresh focaccia bread , I made my own with fresh roasted tomatoes , garlic , thyme , and scallions in the crust and cut into 4x
1 bunch arugula , washed and stemmed
2 plum tomatoes , cut into slices
3/4 cup mayonnaise
2 tablespoons bottled horseradish
3 teaspoons dark whole grain mustard
2 teaspoons salt
1/4 lb sliced fresh havarti cheese
1 teaspoon black pepper

Instructions

1.Preheat the oven to 425°F.
2.Gently crush the peppercorns and mix with the kosher salt in a small bowl. Rub the seasoning blend over the beef tenderloin.
3.Heat the olive oil in an oven-safe skillet or roasting pan over high heat. Sear the beef on all sides, about 2 minutes per side.
4.Transfer the skillet or pan to the preheated oven. Roast the beef for 20-25 minutes or until an instant-read thermometer inserted into the thickest part of the meat registers 125°F for medium-rare.
5.In a small bowl, mix together the mayonnaise, horseradish, whole grain mustard, and salt.
6.Let the beef rest for at least 10 minutes before slicing it thinly against the grain.
7.Cut the focaccia bread into four pieces. Slice each piece in half horizontally. Toast the bread.
8.Spread the mayonnaise mixture on each half. Top the bottom half with arugula, sliced plum tomatoes, and fresh havarti cheese.
9.Add the sliced beef tenderloin on top of the cheese and sprinkle black pepper to taste.
10.Top with the other half of the focaccia bread and serve immediately.
