Instructions

1.Heat the chicken stock in a saucepan, and keep it warm on low heat.
2.Preheat the oven to 400°F.
3.In a large, heavy-bottomed pan, heat the olive oil and butter over medium heat. Add the onion, garlic, and celery and stir until they are soft and translucent.
4.Add the risotto rice and stir to coat the grains with the oil. Add the wine and stir until the wine is absorbed. Add a pinch of salt and a few grindings of pepper.
5.Add the hot chicken stock, one ladleful at a time, stirring constantly and allowing the stock to be absorbed before adding more.
6.While the risotto is cooking, roast the mushrooms. Toss them in olive oil, salt and pepper, garlic and thyme.
7.Once the risotto is cooked, remove it from the heat.
8.Add the roasted mushrooms, Parmesan cheese, and butter. Stir to combine. Add salt and pepper to taste.
9.Finish the risotto by adding finely chopped parsley and lemon zest.
