Ingredients

1 pork legs
1 cup balsamic vinegar
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon marjoram
5 garlic cloves
3 cups of rioja red wine ( Marques de Caceres is my favourite )
2 cups of pitted prunes
1/2 liter heavy cream
salt and pepper

Instructions

1.Preheat the oven to 325 degrees Fahrenheit.
2.Place the pork leg in a roasting pan and season with salt and pepper.
3.In a separate bowl, mix together the balsamic vinegar, thyme, oregano, marjoram, and minced garlic cloves.
4.Pour the mixture over the pork leg, making sure to coat it thoroughly.
5.Add 2 cups of rioja red wine to the roasting pan.
6.Roast the pork for 2 hours, basting every 30 minutes with the pan juices.
7.In a separate saucepan, bring the pitted prunes and remaining 1 cup of rioja red wine to a boil. Reduce heat and let simmer for 30 minutes.
8.Add 1/2 liter of heavy cream to the saucepan and stir until the sauce thickens.
9.Once the pork is fully cooked, remove from the oven, and let it rest for 10 minutes before carving.
10.Serve the pork with the plum sauce on the side.
