1 1/2 - 2 lbs boneless leg of lamb , approx
1 onion , chopped very finely
3 cloves garlic , crushed
4 tablespoons fresh parsley , finely chopped
4 tablespoons fresh coriander , finely chopped
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1 teaspoon harissa
2 tablespoons lemon juice or 2 tablespoons lime juice
1/2 cup olive oil
salt

Instructions

1.Preheat oven to 425°F (220°C)
2.Combine onion, garlic, parsley, coriander, cumin, turmeric and harissa in a bowl.
3.Add lemon or lime juice and olive oil. Mix well.
4.Place leg of lamb onto a baking dish and rub the chermoula spice mix onto the meat surface, pressing gently to adhere to the surface.
5.Let it marinate for 30 minutes in the fridge.
6.Transfer baking dish to preheated oven and roast until internal temperature reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium, about an hour.
7.Remove from oven and let it rest for 10 minutes before slicing.
