Ingredients

4 small fresh jalapeno peppers
1 cup milk
1 egg
3 tablespoons melted butter or 3 tablespoons vegetable oil
1 1/4 cups cornmeal
1/2 cup white flour
1/4 cup wholewheat flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 cup strong cheddar cheese , diced ( or grated )
Roasted Jalapeno and Cheese Cornbread is a popular form of cornbread in the Southern part of the United States. The roasted jalapenos and cheddar cheese add a nice twist to the regular cornbread and make it a great side dish or even a snack. Instructions

1.Preheat the oven to 400°F/200°C.
2.Roast the jalapenos on a baking sheet for 25 minutes or until they are slightly charred.
3.While the jalapenos are roasting, whisk together the milk, egg, and melted butter (or vegetable oil) in a large mixing bowl.
4.In another bowl, mix together the cornmeal, white flour, wholewheat flour, baking powder, sugar, ground cumin, and salt.
5.Add the dry ingredients to the wet ingredients, stirring until just combined. Add the cheddar cheese and roasted jalapenos to the batter, mixing thoroughly.
6.Pour the batter into a greased 8-inch square pan, smooth the top, and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
