12 garlic cloves

1 cup olive oil , divided
2 cups Spanish onions , chopped
2 cups dry white wine
4 sprigs basil , fresh , leaves only
salt , to taste
ground black pepper
Roasted Heirloom Tomato Sauce is the perfect addition to any pasta dish. Instructions

1.Preheat oven to 400°F.
2.Cut tomatoes into quarters. Slice garlic cloves.
3.Spread tomatoes, garlic, and thyme on a baking sheet. Drizzle with half a cup of olive oil and season with salt and pepper.
4.Roast in the oven for 40 minutes, until the tomatoes are soft and slightly charred.
5.Heat remaining olive oil in a pot over medium heat. Add onions and cook until soft and translucent.
6.Add white wine, tomatoes, garlic, and thyme to the pot and bring to a boil.
7.Reduce heat and let it simmer for 30 minutes.
8.Add basil and blend until smooth.
9.Season with salt and pepper to taste.
10.Serve with your favorite pasta.
