1 head of cauliflower | |
3 cloves of garlic, minced | |
2 tbsp olive oil | |
Salt and black pepper to taste | |
Fresh parsley for garnish |
1. | Preheat the oven to 375°F. |
2. | Cut the cauliflower into small florets and place them into a large bowl. |
3. | Add the minced garlic, olive oil, salt, and black pepper. Toss well to combine. |
4. | Spread the cauliflower on a baking sheet and roast for 25-30 minutes or until tender and golden. |
5. | Remove from the oven and transfer the roasted cauliflower rice to a serving dish. |
6. | Garnish with fresh parsley and serve. |
