1/3 cup small pearl tapioca
2 cups heavy cream
2 large eggs
2 egg whites
1 1/2 teaspoons honey
1 teaspoon salt
1/4 teaspoon nutmeg ( best if freshly grated )
1/4 teaspoon white pepper
1/4 teaspoon cayenne pepper

Instructions

1.Preheat the oven to 325°F.
2.In a small saucepan, combine the milk and garlic cloves. Heat over medium heat until the milk is steaming and the garlic is tender.
3.Remove the garlic cloves and discard. Pour the milk into a blender along with the tapioca pearls. Blend until smooth.
4.In a medium saucepan, heat the cream over medium heat until it is steaming. In a large mixing bowl, whisk together the eggs and egg whites until frothy. Add the honey, salt, nutmeg, white pepper, and cayenne to the eggs and whisk until well combined.
5.Slowly pour the steaming cream into the egg mixture while whisking constantly.
6.Whisk the tapioca mixture into the egg mixture until smooth.
7.Pour the mixture into 6 ramekins or custard cups.
8.Place the ramekins or custard cups in a large baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins or cups.
9.Bake the flans for 45-50 minutes, or until just set.
10.Remove the flans from the water bath and let cool completely. Chill the flans in the refrigerator for at least 1 hour or until ready to serve.
