Ingredients

4 pints cherry tomatoes , washed and stemmed
2 onions , peeled and chopped ( preferably vidalia )
1 head garlic , peeled
1 cup kalamata olive , pitted and halved
1/4 lb whole mushroom , cleaned and stemmed
1/4 cup fresh basil ( can sub 1 tbsp dried thyme ) or 1/4 cup thyme , snipped ( can sub 1 tbsp dried thyme )
sea salt
fresh ground black pepper , to taste
dried chili pepper flakes , pinch
1/3 cup olive oil
1/2 lb pasta , sea salt and boiling water
1/4 cup parmesan cheese , grated

Instructions

1.Preheat the oven to 425°F.
2.Spread the cherry tomatoes, onions, garlic, olives, and mushrooms on a baking sheet in a single layer as evenly distributed as possible. Sprinkle with salt, pepper, and chili pepper flakes. Drizzle olive oil over the vegetables, making sure they are well coated.
3.Roast in preheated oven for 20-25 minutes until the tomatoes and onions are softened and slightly charred.
4.Meanwhile, cook the pasta in boiling water until al dente. Drain and reserve 1/2 cup of pasta water.
5.In a blender or food processor, pulse the roasted vegetables and basil or thyme until smooth. Gradually add the reserved pasta water to reach desired consistency.
6.Serve the sauce over the cooked pasta and sprinkle with Parmesan cheese.
