Instructions

1.Preheat oven to 425°F.
2.Toss cauliflower, garlic, onion, and potato with olive oil, salt and pepper on a baking sheet until coated.

4.Transfer vegetables to a large pot and add vegetable broth and non-dairy milk substitute.
5.Bring the mixture to a boil and then reduce heat and let it simmer for 10-15 minutes.
6.Blend the soup until smooth, using an immersion blender or a regular blender.
7.Place cashews in a blender and blend until finely ground.
8.In a small bowl, mix together ground cashews, curry powder, salt and warmed non-dairy milk until well combined to make curried cashew cream.
9.Serve the soup in bowls and dollop with curried cashew cream and chives for garnish.
