Ingredients

1 head cauliflower
2 tbsp olive oil

Dressing:
1/4 cup olive oil
3 tbsp apple cider vinegar
1 tbsp whole grain mustard
1/2 tsp honey
1/4 tsp salt
1/4 tsp black pepper
This roasted cauliflower salad is a delicious and healthy way to get your daily dose of veggies. Instructions

1.Preheat the oven to 425°F (220°C).

3.Roast for 20-25 minutes, or until tender and golden brown.
4.In a large bowl, combine the roasted cauliflower, baby spinach, dried cranberries, sliced almonds, and crumbled feta cheese.
