Ingredients

1 lb carrot ( see step 2 for preparation )
1 medium white onion , sliced into rings 1/4 inch thick
6 -8 garlic cloves , halved
4 -6 teaspoons olive oil ( I use the lesser amount to remain WW Core )
2 teaspoons cumin
1/2 teaspoon cinnamon
1/2 lemon
1 tablespoon chopped parsley
1 tablespoon chopped cilantro
1/4 cup moroccan black olives or 1/4 cup kalamata olive , pitted and halved
This dish is inspired by the flavors of Morocco, where spices such as cumin and cinnamon are often used in savory dishes. Instructions

1.Preheat oven to 425 degrees Fahrenheit.
2.Peel and slice carrots (lengthwise in half and cut diagonally) approximately 1/4 inch thick.
3.Spread the carrots, onion rings, and garlic cloves in a single layer in a baking dish.
4.Drizzle olive oil over carrot mixture and toss well to coat.
5.Sprinkle cumin and cinnamon evenly over the top.
6.Roast for 30-40 minutes stirring occasionally until the carrots are tender and the onions are lightly browned.
7.Remove from oven and squeeze fresh lemon over the top.
8.Garnish with parsley, cilantro, and olives.
9.Serve and enjoy!
