35 g good quality walnuts , toasted , chopped coarsely

60 ml red wine vinegar
80 ml olive oil
1 clove garlic , crushed
2 teaspoons grainy mustard

Instructions

1.Cook pasta according to package directions and drain.

3.Combine pasta with capsicums, goat cheese, walnuts and basil in a large bowl.
4.Whisk together red wine vinegar, olive oil, garlic and mustard in a small bowl. Pour dressing over pasta mixture and toss until evenly coated.
5.Serve at room temperature.
