2 lbs beets , washed
3 tablespoons garlic , minced

Instructions

1.Preheat oven to 375F/190°C.
2.In a baking dish, place the washed beets, garlic, olive oil, red wine vinegar, salt, and pepper.
3.Cover the baking dish with aluminium foil and bake for 1 hour and 30 minutes or until the beets are tender.
4.While the beets are in the oven, cut the unpeeled potatoes into quarters and place them in a pot with cold water over high heat. Bring to a boil and cook for 15 minutes or until they are tender.
5.Drain the potatoes and let them cool.
6.Remove the garlic from the roasted beets and place them on a mixing bowl with the potatoes, garlic, olive oil, white wine vinegar, salt, and pepper.
7.Mash the potatoes and garlic until smooth.
8.Cut the beets into wedges and serve with the potato garlic sauce.
