Ingredients

2 large beets
1 head garlic , halved crosswise
1 tablespoon extra-virgin olive oil
1 pinch salt and ground black pepper to taste
1 can chickpeas , drained and rinsed
1/4 cup extra-virgin olive oil
1 1/2 lemons , juiced
2 tablespoons tahini
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/4 cup plain Greek yogurt ( optional )
Roasted Beetroot and Garlic Hummus is a unique take on a traditional Middle Eastern dish. This recipe adds the flavor and color of roasted beets to the creamy texture of chickpea hummus. Instructions

1.Preheat the oven to 400°F (200°C).
2.Wash the beets and cut off the stems. Wrap each one in aluminum foil, along with the head of garlic, drizzled with 1 tablespoon of olive oil and seasoned with salt and pepper.
3.Roast the beets and garlic in the oven for 50-60 minutes, or until soft.
4.Allow the beets to cool, and then peel off the skin. Squeeze out the garlic cloves.
5.In a food processor, combine the beets, garlic, chickpeas, olive oil, lemon juice, tahini, cumin, salt, black pepper, cayenne pepper, and yogurt if desired. Process until smooth.
6.Transfer the hummus to a bowl, garnish with more olive oil and cayenne pepper if desired. Serve with pita bread or vegetables.
