Ingredients

2 beets ( about 3/4 pound )
1 cup diced Asian pears or 1 cup ripe pear
1/4 cup diced celery
2 tablespoons chopped pistachios
3 tablespoons fresh lemon juice
1 tablespoon honey
1/2 teaspoon brown sugar
1/4 teaspoon black pepper
1 dash salt
1 dash cayenne pepper
2 curly leaf lettuce leaves ( optional )
This Roasted Beet, Pistachio and Pear Salad is a delicious and healthy combination of roasted beets, chopped celery, diced Asian pears, and chopped pistachios, all tossed in a sweet and tangy dressing. Instructions

1.Preheat oven to 400°F (200°C)
2.Peel and slice the beets into small cubes. Toss the beet cubes with olive oil and season with salt and black pepper. Wrap the beets tightly in foil and place on a baking sheet. Roast in the oven for 35-40 minutes or until beets are tender
3.While the beets are roasting, whisk together lemon juice, honey, brown sugar, salt, black pepper, and cayenne pepper in a small bowl.
4.In a large bowl, combine roasted beets, diced celery, and diced Asian pears. Pour the dressing over the beet mixture and lightly toss.
5.Arrange the curly lettuce leaves on a plate and spoon your beet mixture over it. Sprinkle with chopped pistachios and enjoy!
