Ingredients

2 globe artichokes
200 g new potatoes , halved
2 tablespoons lemon extra virgin olive oil
2 garlic cloves , chopped finely ( see note above )
2 sprigs rosemary , with the leaves removed ( and sticks discarded )
freshly ground rock salt and black pepper
Roasted Artichokes & New Potatoes is a simple and classic side dish that is perfect for serving with grilled meats or as part of a vegetarian meal. Instructions

1.Preheat the oven to 200C.
2.Firstly remove the stalks from the artichokes and cut off the top quarter of artichokes then cut them in half lengthways.
3.Add the artichokes and potatoes to a roasting tray and drizzle over the lemon olive oil, chopped garlic, and rosemary leaves. Mix together and season with rock salt and black pepper.
4.Roast the potatoes and artichokes in the oven for around 45 minutes, or until golden brown and crispy.
