1 butternut squash , halved and seeded
2 large onions , peeled and quartered
1 medium head garlic
6 cups vegetable broth
1 bay leaf

Instructions

1.Preheat the oven to 375°F. Line a baking sheet with parchment paper.
2.Cut the butternut squash in half and remove the seeds. Cut into large cubes.
3.Peel the garlic and cut the head in half.
4.In a large bowl, toss the butternut squash, onions and garlic with the olive oil.
5.Place the vegetables on the prepared baking sheet and roast in the oven for 35-40 minutes or until the vegetables are tender.
6.Once they are roasted, let the vegetables cool a bit and then scoop the flesh out of the squash halves.
7.Combine the roasted vegetables with the vegetable broth, bay leaf, brown sugar, curry powder, oregano, cinnamon, nutmeg, salt, and pepper in a large pot.
8.Bring the mixture to a boil, then reduce the heat and let simmer for approximately 25 minutes.
9.Remove the bay leaf and puree mixture until smooth using an immersion blender or transfer mixture to a blender and puree in batches.
10.Mix in yogurt and reheat as needed. Garnish with fresh parsley before serving, if desired.
