1 medium butternut pumpkin
6 slices mozzarella cheese
1 medium eggplant
2 medium red peppers

Instructions

1.Preheat the oven to 200°C/180°C fan/gas mark 6.
2.Peel and slice the butternut pumpkin into thin slices and sprinkle with salt and pepper.
3.Cut the eggplant into thin slices and do the same.
4.Halve the red pepper and remove the seeds. Slice the onion into rings. Toss them all in a bowl of olive oil, salt, and pepper.
5.Add the diced tomatoes and white vinegar to the veggie bowl and mix everything well.
6.Grease a baking dish and start layering the veggies and cheese into a pyramid shape, starting with a slice of pumpkin and ending with the remaining slices of cheese on top.
7.Cover with foil, and bake for 50 minutes.
8.Remove the foil and bake for another 10-15 minutes or until the cheese is golden brown.
