Ingredients

2 teaspoons finely chopped fresh rosemary , plus sprigs , for garnish
8 fluid ounces olive oil
2 egg yolks
1/4 teaspoon French mustard
1/4 teaspoon salt
1 teaspoon white wine vinegar
1 garlic clove , crushed
1 1/2 - 2 ounces quince paste ( membrillo )
4 racks of lamb or 1 leg of spring lamb
3 sprigs fresh rosemary ( optional )
1 -2 garlic clove ( optional )
salt & freshly ground black pepper
Roast Rack of Lamb With Rosemary and Membrillo Aioli and Rustic is a hearty meal that is perfect for a special occasion or Sunday dinner. The rack of lamb is seasoned with fresh rosemary and the addition of the quince paste to the aioli sauce provides a unique and sweet flavor. Instructions

1.Preheat your oven to 375°F (190°C).
2.Mix together 2 teaspoons finely chopped rosemary, 4 fluid ounces olive oil, egg yolks, French mustard, 1/4 teaspoon salt, white wine vinegar, and a crushed garlic clove to make the aioli sauce. Stir in the quince paste, then cover and refrigerate until needed.
3.If using racks of lamb, season with salt, pepper, and the remaining olive oil. Brown the lamb in a skillet over high heat on both sides. Remove from skillet and place on a baking sheet (fat-side up). If using leg of lamb, season the same way but do not brown.
4.Place the lamb in the oven and roast for 17-20 minutes for racks of lamb, or 45 minutes for the leg of lamb.
5.Allow the lamb to rest for 5 minutes before slicing into chops. Serve with the chilled aioli sauce and garnish with rosemary sprigs.
6.For the rustic potatoes, cut potatoes into small bite-sized pieces, toss with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes at 400°F until crispy and golden brown.
