4 cups boiling water
pepper , to taste
1/4 cup parsley , finely chopped
2 tablespoons butter
1/3 cup parmesan cheese , shredded
This roast pumpkin and leek risotto is a comforting dish that's perfect for fall and winter. Instructions

1.Preheat the oven to 400°F. Line a baking sheet with parchment paper.
2.Place the diced pumpkin on the prepared baking sheet and spray with olive oil cooking spray. Season with pepper, if desired.
3.Roast in the preheated oven for about 20 minutes or until golden.
4.Meanwhile, in a large saucepan, melt the butter over medium heat. Add the leek and bacon and cook until softened.

6.Dissolve the vegemite in the boiling water and add it to the rice mixture, 1 cup at a time, stirring constantly until each cup has been absorbed.
7.Add the roasted pumpkin cubes to the rice mixture. Season with pepper and stir well.
8.Cook the risotto for 10-15 minutes or until the rice is tender and creamy.
9.Stir in the chopped parsley, butter, and parmesan cheese until well combined. Serve immediately.
