Roast Prime Ribs of Beef is a classic American dish that is often reserved for special occasions and holiday feasts. A standing rib roast, also known as prime rib, is a cut of beef that is prized for its tender and flavorful meat. The marbling of fat throughout the meat makes it extremely moist, while the bone-in roast enhances the flavor and moisture of the meat. It is typically served with bold and flavorful sides like horseradish sauce, roasted vegetables, and mashed potatoes. This Roast Prime Ribs of Beef recipe is paired with a savory pan gravy made with shiitake mushrooms that adds depth and complexity to the dish.

Instructions

1.Preheat the oven to 450 degrees F
2.Rub the roast all over with the rosemary, salt, and 1/4 cup softened butter. Set the roast on a rack in a roasting pan and roast for 15 minutes.
3.Reduce the oven temperature to 325 degrees F and roast the beef for 2 to 2 1/2 hours longer, or until the meat thermometer registers 130 degrees F (for medium-rare).
4.While the beef is roasting, make the pan gravy. In a large heavy skillet, cook the onion and bell pepper in 1 1/2 tablespoons butter over moderately low heat until the vegetables are softened.
5.In a small bowl, combine the dried shiitake and the hot water. Let the mushrooms soak for 20 minutes, until they are softened.
6.Add the fresh mushrooms to the skillet and cook until browned lightly. Add the beef broth, the sherry, and the shiitake and the soaking liquid, bring the mixture to a boil, stirring, and simmer the gravy, stirring occasionally, for 5 minutes.
7.Stir in the arrowroot mixture and cook the gravy, stirring constantly, until it is thickened and smooth. Season with salt and pepper to taste.
