Ingredients

2 pork tenderloin ( about 1 pound each )
salt and pepper
1 lemon ( juice and zest )
1 lime ( juice and zest )
3 tablespoons olive oil , divided
1 tablespoon chopped fresh oregano
2 garlic cloves , crushed
1 can pineapple tidbits , drained
1 can black beans , drained and rinsed
1 can roasted diced green chilies
1/2 cup diced canned pimiento
3 canned chipotle chiles in adobo , mashed and strained ( to remove seeds )
1/2 cup diced onion
1/4 cup chopped cilantro
1 tablespoon minced garlic
1/4 cup olive oil
3 tablespoons lemon juice
3 tablespoons lime juice
1 teaspoon toasted ground cumin , ground
1 dash salt and pepper

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).

3.Heat 1 tablespoon of olive oil in a large skillet over high heat. Add the pork tenderloins, searing all sides until brown.

5.Let the pork tenderloins rest for 5 minutes before slicing.
6.To make the salsa, combine the black beans, pineapple tidbits, diced green chilies, pimiento, chipotle chiles, onion, cilantro, minced garlic, 1/4 cup olive oil, lemon juice, lime juice, cumin, salt, and pepper in a bowl.
7.Serve the sliced pork tenderloins with the black bean-chipotle salsa.
