Ingredients

1 kg pork shoulder
1 tablespoon olive oil
1 onion , chopped
2 garlic cloves , crushed
400 g chopped tomatoes
2 tablespoons chipotle chiles in adobo , paste
50 g raisins
75 g peanuts
1/4 teaspoon cinnamon
50 g pumpkin seeds
250 ml chicken stock
1 orange , zest of
30 -50 g dark chocolate , grated , to taste
1 avocado , diced
2 tablespoons coriander leaves

Instructions

1.Preheat the oven to 170°C/325°F/gas 3.
2.Season the pork shoulder with salt, then place in a roasting tin and roast for approximately 3 hours.

6.Once the pork is cooked, remove from the oven and let it rest for 10 minutes before shredding it with two forks.
7.Add the shredded pork to the mole sauce and stir through the grated chocolate.
8.Serve with diced avocado and coriander leaves.
