Ingredients

3 kg pork legs
20 ml freshly ground salt
15 ml fresh ground black pepper
30 ml mustard powder
2 liters Coca-Cola
1/2 cup cooking oil
50 ml white vinegar
3 teaspoons brandy
900 g pineapple rings
of fresh mint

Instructions

1.Preheat oven to 160°C.
2.Mix salt, black pepper, and mustard powder together and rub all over the pork legs.
3.Place the pork legs in a deep roasting tray and pour Coca-Cola over them.
4.Cover the tray with foil and roast for 4 hours.
5.Once cooked, remove the pork legs from the tray and increase the oven temperature to 220°C.
6.Baste the legs with cooking oil and roast for another 20 minutes until crispy.

8.Serve the pork legs hot with pineapple rings, drizzled with the vinegar and brandy mixture and garnished with fresh mint.
