Ingredients

1 leg of lamb ( or more )
4 tablespoons coriander seeds
8 -10 garlic cloves , peeled
4 slices bacon
dried thyme
750 ml red wine
flour ( for gravy later )
beef stock ( ditto )

Instructions

1.Preheat the oven to 325°F.
2.In a spice grinder, grind the coriander seeds into a coarse powder.
3.Cut 8-10 slits in the lamb and push a garlic clove and a small piece of bacon into each slit.

5.Place lamb in a roasting pan, pour the red wine over the meat, and cover the pan with foil.
6.Bake for approximately 3 to 3 1/2 hours, or until the meat is tender.
7.When done, remove the meat from the pan and keep warm while making the gravy.
8.Mix flour with 2 tablespoons water until smooth to create a slurry. Add this to the pan, then add enough beef stock to create about 2 cups of liquid. Simmer, whisking constantly, until the gravy has thickened and reduced by about one-third, about 10 minutes.
9.Slice the meat and serve with the gravy on top. Enjoy!
