Ingredients

2 grouse , about
salt
1/2 cup chopped onion
1/2 cup chopped mushroom
1 can condensed consomme
1/8 teaspoon crumbled oregano
1 cup wild rice
water
1 medium onion , chopped
2 carrots , chopped
1 apple , peeled and chopped
1 can condensed cream of mushroom soup
1/4 cup light cream
1/4 cup red wine
Roast Grouse with Wild Rice is a classic recipe that is popular in regions where wild game is commonly found. Instructions

1.Preheat the oven to 350°F (180°C).
2.Season the grouse well with salt, inside and outside.
3.Put the chopped onion and mushroom in the cavity of each bird.
4.Combine the consommé and oregano and pour half of this mixture over the grouse.
5.Place the grouse in a roasting pan and roast for 1 hour and 15 minutes or until tender.
6.While the grouse is cooking, rinse the wild rice and combine with 4 cups of water, chopped onion, chopped carrot, chopped apple, condensed cream of mushroom soup, light cream, and red wine in a large pot.
7.Bring to a boil, then reduce heat and simmer for 50-60 minutes or until rice is tender.
8.Serve the grouse with some of the remaining consommé and the wild rice.
