Ingredients

1 goose , giblets and neck discarded
3 cloves garlic , thinly sliced
8 gala apples or 8 golden delicious apples , peeled , each cut into 6 wedges
1/4 cup fresh lemon juice
6 tablespoons sugar
1/4 cup calvados
1 1/2 teaspoons ground cinnamon
Roast goose is a festive dish popular during the holiday season, especially in Germany, Poland, and the Czech Republic. Instructions

1.Preheat your oven to 425°F (220°C)
2.Rub the goose with garlic slices, salt and pepper.
3.Place the goose in a large roasting pan and roast for 30 minutes.
4.Reduce the oven temperature to 375°F (190°C) and roast the goose for another 2 hours or until cooked through and browned.
5.Meanwhile, in a separate skillet, toss apples with lemon juice, sugar, calvados, and cinnamon. Cook over medium-low heat, stirring occasionally until caramelized and tender.
6.Once roasted, remove the goose from the oven and let it rest for 20 minutes, before carving.
7.Serve the roast goose with caramelized apples on the side as a garnish.
