Ingredients

1/2 cup cashew halves

1/2 cup chopped celery
1 cup rice
1 1/2 cups hot chicken soup
1/2 cup orange juice

10 dried apricots , chopped

1 teaspoon finely grated fresh lemon rind
4 lbs roasting chickens

Instructions

1.Preheat the oven to 350 degrees F.
2.Toast the cashews on a baking sheet in the oven for 5 minutes, until lightly browned.

4.Add the rice to the skillet and stir for 1 minute to coat with the oil.

6.In a medium bowl, combine the apricots, raisins, cinnamon, lemon rind, and toasted cashews.
7.Loosen the skin on the breast of the chicken and stuff with the fruit and nut mixture. Sprinkle the chicken with salt and pepper.
8.Place the chicken in a roasting pan and roast for 1 1/2 hours, or until the juices run clear when the thigh is pierced with a knife. Let the chicken stand for 10 minutes before carving.
