1 1/2 cups unsalted chicken stock
1 1/2 lbs potatoes , pared & diced
3 1/2 lbs roasting chickens , skin on but as much fat as possible removed

Instructions

1.Preheat oven to 375°F.

8.Roast the chicken in the preheated oven for about 2 hours, or until fully cooked.
9.Allow the chicken to rest for 10 minutes before carving.
