1 whole chicken
1 lemon , cut up
1/4 cup whole fresh rosemary
1 -3 whole garlic clove , to taste
1 teaspoon salt
3 -4 tablespoons softened butter
1/2 cup soft wheat flour
1/2 cup dry white wine
1/2 - 1 cup water

Instructions

1.Preheat oven to 375°F (190°C).
2.Rinse chicken and pat dry with paper towels. Season the inside of the chicken with salt.
3.Mix together butter, garlic, rosemary, salt, and fresh lemon juice.
4.Place the chicken in a roasting pan. Rub the butter mixture all over the chicken, under the skin and inside the cavity.
5.Pour the white wine and water in the bottom of the pan and place in the oven.
6.Roast until the chicken is cooked through and the juices run clear, about 1 1/2 hours. Baste occasionally with the pan juices.
