3 tablespoons extra-virgin olive oil

2 tablespoons kosher salt
6 medium garlic cloves , peeled and roughly chopped

1/4 cup lime juice
1 teaspoon habanero pepper , minced
1 whole chickens
1 can beer , half filled and sprayed with nonstick cooking spray
3/4 cup mayonnaise
1 tablespoon lime juice
1 tablespoon fresh cilantro , minced
1 garlic clove , minced to a paste
1 teaspoon pickled jalapeno pepper , minced to a paste
salt , to taste
Roast Chicken Peruvian Style is a flavorful and aromatic dish inspired by the traditional Peruvian chicken recipe called 'pollo a la brasa.' Instructions

1.Preheat the oven to 400°F (200°C).
2.In a blender or food processor, puree the olive oil, mint, salt, garlic, black pepper, cumin, sugar, smoked paprika, oregano, lime zest, lime juice, and habanero pepper until smooth.
3.Rinse the chicken inside and out and pat dry with paper towels
4.Rub the chicken with the marinade until it is evenly coated, including the cavity of the chicken.
5.Place the chicken on a stand, such as a beer can chicken holder, with the half-filled can of beer.
6.Roast the chicken in the oven for about 1 hour and 30 minutes. If the skin starts to get too dark, tent with foil.
7.To make the mayonnaise sauce, combine the mayonnaise, lime juice, cilantro, garlic paste, pickled jalapeno pepper, and salt in a bowl.
8.Adjust the seasoning to taste.
9.Serve the roast chicken with the mayonnaise sauce.
