Ingredients

3 large onions , sliced thin
1 can tomatoes , crushed and drained in a sieve
2 tablespoons olive oil
3 lbs tied boneless beef rib roast , at room temperature ( use bones for soup )
1 tablespoon all-purpose flour
1 cup beef broth
1 cup water
2 tablespoons Worcestershire sauce

Instructions

1.Preheat oven to 450°F (230°C).

3.Meanwhile, season the beef with salt and pepper all over. Heat the remaining tablespoon of olive oil over medium-high heat in a roasting pan or ovenproof skillet. Add beef and sear all sides until brown, about 8-10 minutes.
4.Transfer the skillet or roasting pan to the oven and roast the beef until a thermometer inserted into the thickest part reads 130°F (54°C) for medium-rare, approximately 40-50 minutes.
5.Remove beef from pan and let it rest for 10-15 minutes.
6.While the beef is resting, make the sauce: Remove all but 2 tablespoons of fat from the skillet or roasting pan. Whisk in the flour and cook for 1-2 minutes. Add the beef broth, water, Worcestershire sauce, and reserved tomatoes, whisking until combined. Cook until thickened, about 5-7 minutes.
7.Pour the sauce over the sliced beef and serve with the glazed onions on the side.
