5 -6 lbs beef chuck roast
1/4 lb salt pork , sliced into 1/4-inch strips
6 -8 garlic cloves , minced
3 cups minced onions
1 teaspoon black pepper
1 tablespoon creole seasoning
1/4 1/4 cup bacon drippings or 1/4 cup shortening
6 carrots , diced
6 celery ribs , sliced
1 tablespoon minced parsley
2 -3 sprigs fresh thyme
1 bottle red wine
2 beef bones with marrow
2 quarts beef stock
crusty French bread or French baguette

Instructions

12.Remove the beef from the pot and shred it with a fork.
13.Cut the French bread or baguette into 8-10 inch sections, then split each section lengthwise.
14.Spread mayonnaise and horseradish on the bread, then layer on the shredded beef, lettuce, tomatoes, and pickles.
15.Serve the po-boys immediately, with hot sauce and additional pickles on the side, if desired.
